Same goes in Punjab as well, here Punjabi Hindus are mostly non vegetarian and from ages, people have had performed sacrifice rituals at the Mata's. Very long back those animals after the sacrifice were even distributed as prashad amongst people or cooked in the langars and served. And meat and alcohols are still even served to Kali roop of Shakti even in North India (at big temples as well)
So it is matter of tradition.
